This is the edition vintage of owner Rudy Marchesi’s production of verjus and we are incredibly happy with the resulting product. Grapes for this unique juice were picked at the end of September before reaching full ripeness. We immediately pressed the grapes, separated the juice from the skins, and filtered it four times before bottling. Use it in place of vinegars in cooking or as a mixer for cocktails.

Made from 100% Pinot Gris grapes from our certified Biodynamic and organic vineyards. Keeping it refrigerated after opening will yield a shelf life of about three months. As this verjus is a natural project, expect some sediment in the bottle.

Montinore's Verjus is a cook's delightful friend. It is light (alcohol free, yet adds a hint of wine flavor) and versatile. I like to sprinkle it and a good olive oil as a salad dressing. It's a light beverage mixer or as an aperitif. Verjus can be used when sauteeing vegetables, mushrooms, etc. Simply delightful!
