	Our Wines Each year, we offer a limited release of wines produced exclusively from each of these small, unique plantings as well as carefully selected single varietal blends of both red and white wines, single vineyard wines, and a port. In all, we produce almost 36,000 cases each year from 200 acres of established vines. We strive for relatively low yields of exceptionally flavorful fruit, carefully ferment it in small batches, fuss over them like babies, then sell them ‘til they’re gone. The aroma starts with earthy notes and quickly turns to red cherry, violets and praline. The flavors are bright, sweet red cherry with some tangy cranberry, then they turn to a mix of raspberry and blackberry with light pepperiness in the finish. The texture of the wine is silky yet mouth filling. Pinot Noir is a good food match with salmon, a variety of red meats, dishes prepared with wine sauces, and chocolate." John Whatever
